Green Chile, Chicken, Corn And Potato Chowder

Ingredients
- 1 rotisserie chicken, shredded
- 2 (113 g/4 oz) can diced green chile
- 2 (900 ml/30 oz) box chicken broth
- 0.25 cup instant mashed potato mix, plus more for thickening
- 325 g frozen breakfast potatoes
- 1.5 cups frozen corn
- 2 cups frozen chopped spinach
- Cajun seasoning, to taste
- 0.5 cup heavy-cream
- 1 (540 ml/19 fl oz) can cannellini beans, drained and rinsed
- 1 lemon, juiced
Toppings (optional)
- Green Onion
- Cheese
- Bacon
- Sour Cream
- Fried Onions

Cook the chowder base
To a pot add chicken, broth, chiles, corn, mashed potato mix, and Cajun seasoning. Bring to a boil.If you are serving with bacon, now would be a good time to get it started.Reduce to a simmer and add frozen breakfast potatoes to the pot. - 2
Finish the chowder
Once potatoes have softened, add heavy cream, lemon juice, cannellini beans, and frozen spinach to the pot and stir.Add more instant mashed potato until desired thickness.Once spinach has melted in, taste and adjust seasoning.Serve with toppings of choice.

- • This is an early recipe and may change significantly
- • 1 lemon may not be enough, I added some white vinegar to up the acidity a bit
